Shakawath Hossain obtains copyright for food cost management framework

Md Shakawath Hossain, chief executive officer of Unique Hotel & Resorts, has received copyright registration from the Bangladesh Copyright Office for his intellectual work, ‘Shakawath's Six Control Points for Food Cost Optimization’.

Unique Hotel & Resorts is the owning company of The Westin Dhaka, Sheraton Dhaka and HANSA – A Premium Residence, according to a press release.

The framework supports sustainability by helping hotels purchase based on actual needs, manage inventory, maintain appropriate portion sizes, follow proper cooking methods, and reduce food wastage. It is also designed to support long-term cost savings while maintaining food quality, service standards and guest satisfaction.

The framework — developed by Shakawath, based on more than 25 years of experience in hospitality operations — introduces a practical and measurable approach to food cost management.

It focuses on six key areas: Purchase Control, Inventory Control, Right Transfer, Portion Control, Appropriate Cooking and Wastage Control.

The framework brings purchasing, receiving, stores, cost control, finance, culinary, and food and beverage service functions together under a single system.

It has been implemented across The Westin Dhaka, Sheraton Dhaka and HANSA – A Premium Residence since 2023. Its implementation has improved cost awareness and contributed to approximately Tk 2 crore in food cost savings across the three hotels.

Leaders, department heads and relevant team members from the three hotels have been actively involved in implementing the framework, contributing to measurable improvements in food cost control and savings.

The Six Control Points framework has also been incorporated into the academic curriculum of Tourism and Hospitality Management at the University of Dhaka.

Plans are now underway to introduce the framework across other academic and professional training platforms, helping future hospitality professionals learn practical food cost management and support sustainability.

The framework also promotes sustainability by enabling hotels to purchase according to actual requirements, manage inventory, balance portions, apply appropriate cooking methods and reduce food wastage. It is intended to generate long-term cost savings while maintaining food quality, service standards and guest satisfaction.

‘This copyright recognition is an important milestone for the Six Control Points initiative. We are now working to take it nationwide across all areas of Bangladesh's hospitality sector. We are also working to align it with international hotel brands to explore its future implementation across the globe,’ Shakawath said.

The copyright recognises ‘Six Control Points for Food Cost Optimization’ as Shakawath's original work and provides a stronger foundation for its wider use in the hospitality and education sectors.
